Most cheese sauces rely on a flour-based roux to thicken and hold everything together. That is the one ingredient that does not have a place in a keto kitchen, so this version skips it entirely and leans on cream cheese and heavy cream instead.
I tested this with a straight 3-cheese Italian blend, bacon, and green onions, but the base itself is flexible. A reader made it with ham and Swiss instead and reported it just as good, which tracks, since any good melting cheese works here as long as you keep the cream cheese and heavy cream base the same.
Baking dish size matters more than people expect. A full baking dish needs about 20 minutes, but individual ramekins cook through in as little as 8 to 10 minutes, so check them earlier than you would a full-size casserole. You are looking for a bubbly, browned top and tender-crisp cauliflower underneath, not fully soft cauliflower that has gone mushy in the oven.

- Mustard powder – Adds depth without a strong mustard flavor on its own.
- Shredded cheese – A 3-cheese Italian blend works well, but cheddar, ham and Swiss, or even blue cheese are all good swaps as long as it melts well.
- Bacon – Cooked crisp and drained, then crumbled or chopped.
- Green onions – Sliced, both the white and green parts.
How to Make Cauliflower No-Mac ‘n Cheese

Warm the cream cheese and heavy cream together in a pot over low heat, stirring frequently until smooth and combined.

Add the mustard powder and garlic to the warmed cream mixture, then remove from the heat and stir in the shredded cheese, crisp bacon, and green onions.

Break the cauliflower into bite-size florets, rinse, and shake dry. Add it to a large bowl with about half the cheese sauce, and stir well.

Add more sauce if needed so the cauliflower is well coated but not drowning, then transfer to a baking dish or individual ramekins.

Bake at 375°F until bubbly and browned on top, about 20 minutes for a full dish or 8 to 10 minutes for individual ramekins. Check ramekins early since they cook much faster.

This freezes reasonably well for up to 2 months, though the cauliflower texture softens somewhat after thawing. Thaw overnight in the fridge before reheating.
Cauliflower No-Mac ‘n Cheese
Ingredients
- 1 each head of cauliflower
- 1/2 block cream cheese 4 oz
- 1 cup heavy cream
- 1 clove garlic minced
- 1 teaspoon mustard powder
- 2 cups shredded Italian blend cheese
- 4 slices bacon cooked crisp and drained
- 1/2 cup green onions sliced
Instructions
- To make the sauce, add the cream cheese and cream to a pot and warm it slowly, stirring frequently, over low heat. When combined, add the mustard powder and garlic. Remove from the heat and stir in the shredded cheese blend, crisp-cooked bacon, and green onions. Set aside.
- Prepare the cauliflower by breaking the head into bite-size florets, cutting them in quarters if necessary. Remove excess stems. Rinse and shake to dry.
- Put the cauliflower into a large bowl and add about half the cheese sauce. Stir well to combine. You want it saucy but not drowning in sauce, so add more if needed.
- Put the cheesy cauliflower into a baking dish or individual ramekins and bake in a 375-F oven for about 20 minutes. Individual size dishes will require much less cooking time, maybe 8-10 minutes, so check frequently. You want the top to be bubbly and brown and the cauliflower tender-crisp.
