Assuming every air fryer cooks the same way is an easy mistake. Models vary a lot in actual heat output, so check your own manufacturer’s guide for times and temperatures rather than trusting a recipe’s numbers blindly. This is written for a basket-style air fryer specifically.
Cook the chicken alone first, in a single layer, at 350 degrees for about 10 minutes. Then flip or toss it, add the peppers and onion right on top, and cook another 5 to 8 minutes, until the chicken reaches 165 degrees. Marinating the chicken in the seasoning and oil for a few hours ahead adds more flavor if you have time, though it works fine without it too.
I use my own homemade taco seasoning here, which runs medium spicy. Add more chipotle powder or cayenne for more heat. This is also flexible on protein and vegetables, chicken thighs work in place of breast, and zucchini, asparagus, or green beans all stretch the dish further.
One note on the nutrition figures: they do not include the seasoning itself; add about half a net carb per serving if using my own Fiesta Seasoning.

Slice the chicken into 1/2-inch wide strips and toss with the taco seasoning and oil.

Clean the peppers, remove the stems, and slice into 1/4-inch wide strips. Peel and slice the onion into thin strips.

Air fry the chicken in a single layer at 350°F for about 10 minutes, then flip or toss.

Add the peppers and onion on top of the chicken and cook another 5 to 8 minutes, until the chicken reaches 165°F. Serve with your favorite fajita toppings.

Storage
Chill fully in the fridge or freezer before packaging in an airtight container, vacuum sealed if you have the equipment, for up to 3 months. Thaw fully, then reheat slowly on low heat in the air fryer, or in the microwave. Peppers lose some texture after freezing but stay just as tasty.

- 1 medium yellow bell pepper sliced
- 1 cup red onion sliced
- 2 tablespoons Fiesta Seasoning
Instructions
- Slice the chicken into 1/2-inch wide strips and toss with 2 tbsp of Fiesta Seasoning, and 1 tbsp of oil.
- Clean the peppers and remove the stems. Slice the peppers into 1/4-inch wide long strips.
- Peel and slice the onion into thin strips.
- Air fry the chicken at 350-F for about 10 minutes, then toss.
- Add the peppers and onions to the chicken and cook an additional 8-10 minutes or until the chicken reaches 165-F degrees.
- Serve with your favorite fajita toppings!
