What Is Mayonnaise?

Everyone knows about mayonnaise, but what really is it? Mayonnaise is an emulsification of oil, egg, and acid – in our case, lemon. When you add these ingredients to the blender in a certain order and in a certain way, the high-powered action of the blender whips it all together turning it from a liquid into a spreadable solid. You can make this low-carb mayonnaise by hand, but you’ll need a good whisk, a large bowl, and plenty of muscle.

Ingredients

It doesn’t take much to make this keto condiment and you probably already have everything you need!

  • Oil – Avocado oil is your best pick, or use olive oil.
  • Egg – Use a fresh, whole egg. If you’re worried about using a raw egg, look for pasteurized eggs from your grocery store. They’re less likely to cause any issues.
  • Dijon mustard – You can also use any smooth mustard.
  • Lemon – Just a wee bit of fresh lemon.
  • Salt and pepper – Just a pinch to season it.

How To Make Homemade Keto Mayonnaise

  1. Blend the egg and the Dijon mustard in a blender until smooth.
  2. Drizzle in the avocado oil in a thin stream WHILE the blender is running. This will create a thick emulsion.
  3. Add the lemon juice, salt, and pepper, and pulse to combine.

  • Use a good quality oil to make mayonnaise. Oil can go rancid if it hasn’t been stored properly or if it is too old.
  • Start with 1 tablespoon of lemon juice and add more to taste.
  • You can over-emulsify mayonnaise. Don’t over-mix it!

How To Use Keto Mayonnaise

You can use keto mayonnaise just like any other mayo. Use it as a spread on chaffle sandwiches, or use it as an ingredient in dishes like:

Storage

Homemade mayonnaise does have raw egg in it, and as such, it should be kept refrigerated. If using fresh eggs, you can keep your mayonnaise in an airtight container in the fridge for about a week.
