Large, dense meatballs are the easiest way to throw this off. Keep them small, about a tablespoon each, so they cook through in just a few minutes without falling apart in the broth.
Drop them into broth that is actually boiling, not just simmering, so they cook fast and hold together. Give them 3 to 4 minutes before adding the mushrooms and spinach, which only need another couple minutes to cook through. Season with salt and pepper at the end, once the broth has had time to pick up flavor from the meatballs.
Garnishes are where you can really make this your own. Bean sprouts and green onion are the classics, and neither is counted in the nutrition numbers since they’re optional. Cilantro, sesame seeds, grated carrot, or a splash of sriracha all work well too if you want to build on that.
Ground turkey or chicken both work in place of pork if you’d rather switch it up. If you’re freezing a batch, leave the garnishes off entirely and add them fresh once it’s reheated and ready to serve.

Bring the bone broth or stock to a boil in a large pot. Meanwhile, mix the ground pork with the coconut aminos, sesame oil, ginger, garlic, and a pinch of salt.
Form small, tablespoon-size meatballs and drop them into the boiling broth. Simmer for 3 to 4 minutes, until the meatballs are cooked through.
Add the sliced mushrooms and spinach, and simmer for another 2 minutes. Season with salt and pepper, and garnish with green onions and bean sprouts if using.
Make It A Meal

Storage

Keto Wonton Soup
Ingredients
- 8 cups no sodium chicken stock
- 1 pound lean ground pork
- 2 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 1 tablespoon ginger finely chopped
- 2 cloves garlic finely chopped
- 4 ounces spinach
- 1/2 cup sliced mushrooms
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup bean sprouts optional and not counted in nutritional info
- 1/4 cup green onions sliced (optional and not counted in nutritional info)
Instructions
- Bring the bone broth or chicken stock to a boil in a large pot.
- In the meantime, blend the ground pork with the coconut aminos, seasme oil, ginger, garlic, and a pinch of salt.
- When the broth is boiling, drop 1 tbsp size meatballs of the pork mixture into the broth.
- Simmer for 3-4 minutes.
- Add the thinly sliced mushrooms and spinach. Allow to simmer for another 2 minutes.
- Season with salt and pepper and garnish. Serve and enjoy!
