Chowders are typically a minefield for anyone on a keto or low-carb diet, thanks to potatoes, corn, thickeners, and veggies that aren’t great choices. However, with this chowder (or chowdah), you can tuck into a big bowl guilt-free. You can thicken the broth with xanthan gum if you like, but honestly, this soup is already plenty thick and chunky.

The secret to an amazing chowder is building flavors, and this hearty keto Smoked Sausage Chowder is no exception. Onions, garlic, celery, and carrots are cooked down along with bacon to create the base layer of flavor. Then, add in your favorite keto-friendly smoked sausage. Opt for a leaner sausage as you don’t want a lot of fat in your chowder. Finally, the rest of the veggies go in and it all cooks on the stovetop until you’ve got an amazing bowlful of goodness that’s a welcome treat on any chilly day!

Get yourself a good pot that’ll hold about 10 cups. You want it to have a heavy bottom so that things don’t scorch when you’re cooking. This pot should do the trick and it has a great lid. A good, sharp knife (commercial quality knives are always the best pick), and a solid cutting board are all the equipment you need to make this hearty one-pot meal.

Smoked Sausage Chowder

Thick, chunky, and full of big, bold flavors, this Smoked Sauage Chowder is a great pick for one-pot dinners or on cold nights.

Ingredients

  • 2 links smoked sausage about 1/2 pound
  • 4 strips bacon
  • 1 cup diced onion
  • 1 cup diced carrot
  • 1 clove garlic small clove
  • 1/2 tsp dried thyme
  • 1 cup cauliflower florets
  • 1 cup diced celery
  • 1 cup diced red bell pepper
  • 4 cups chicken broth low/no sodium
  • 1 cup heavy cream
  • 1 tbsp dried chives

Instructions

  • Sautee the bacon, onion, carrots, and celery for about 8 minutes or until the bacon is slightly brown and the veggies are starting to get tender.
  • Slice the smoked sausage and add to the pot, stirring to combine. Cook for 2-3 more minutes, releasing some of the fat from the sausage. Add the garlic, red bell pepper, and cauliflower. Add the dried thyme and stir for one minute.
  • Add the low sodium (or no sodium added) chicken broth and bring to a boil. Turn the heat down to low and continue to simmer for about 15 minutes or until the veggies are soft.
  • Add the cream and dried chives and stir well. Check for salt and pepper, then ladle into cute bowls and enjoy!

  1. Amazing soup! I made this last night. I added some shredded chicken into it and wow! This soup was a crowd pleaser..2nds and thirds were had! Love a flavorful chowder and fits my macros!
