Grab your cheese grater, and let’s get cooking! You can be noshing on this keto Cheeseburger Casserole with dill pickles in about 40 minutes!
For the creamy cauliflower base:
- Cauliflower – One medium-sized head will work. Fresh cauliflower is best with this recipe.
- Heavy whipping cream – To make the cauliflower mash silky smooth.
- White cheddar – You can use yellow cheddar, but then your mash will be yellowish.
- Egg – Just 1 egg to help bind the mash.
For the beefy layer:
- Ground beef – I use lean ground beef in this recipe, so I don’t have to drain off fat.
- Onion powder – I save a few carbs by using onion powder.
- Garlic powder – Gotta have some garlic flavor!
- Salt and pepper – To season the beef.
- Cream cheese – This will make the beefy layer creamy.
- Worchestershire sauce – Adds more flavor to the cheeseburger layer.
- Ketchup – Use your favorite sugar-free brand.
- Cheddar cheese – Shred it yourself to avoid the starchy anti-clumping agents added to pre-shredded cheese.
For the topping:
- Yellow mustard – Regular hot dog mustard is fine.
- Sour cream – Full fat, please.
- Pickles, red onions, and diced tomatoes – All optional, but they add flavor, texture, and color.

How to Make Keto Cheeseburger Casserole
- Cut the cauliflower into florets, put it in a bowl with 1/4 cup of water, and cover it with plastic wrap. Microwave on high to steam it until tender.
- Drain the cauliflower and puree it with cream, egg, and white cheddar cheese until smooth. Set aside.
- Brown the beef along with the onion and garlic powder, salt and pepper. Drain off any excess fat and discard the fat.
- Turn the heat down to low and add the cream cheese, stirring until it is melted.
- Add the Worcestershire sauce and sugar-free ketchup. Adjust the seasoning with salt and pepper.
- Add the mashed cauliflower in a layer on the bottom of a 9×9 (or similar) casserole dish.
- Add the ground beef mixture to the top and sprinkle with cheddar cheese.
- Bake covered with foil at 375-F for about 15-20 minutes or until heated through and bubbly.
- Top with diced pickle, tomatoes, and onions – all your favorite cheeseburger flavors – and dig in!

- Depending on the size of your casserole dish and the size of the cauliflower you used, you may not have to use all of it. Save some for another meal – remember there is raw egg in it, so it should be heated through to cook the egg.
- The beef mixture should be creamy but not soupy. Be sure to drain off excess fat before adding the cream cheese.
- Don’t skip the garnishes – they add so much to this dish and amp up the flavors!
- Don’t care for mashed cauliflower? Skip this layer! Serve the dish with your favorite vegetable sides instead, like Green Beans Almondine with Bacon or bacon-wrapped asparagus.

This is the most delicious casserole I’ve ever eaten! And I’ve made a lot of low-carb casseroles over the years.
It’s even better than the KETO CHICKEN ZUCCHINI CASSEROLE and the King Ranch Casserole and the Taco Casserole from this wonderful website.
I was disappointed that it it listed sour cream as an ingredient but never said what to do with it. I assume you’re supposed to add it into the cooked cauliflower mixture for pureeing. It also didn’t mention that the dill pickles and mustard were garnish ingredients. But the recipe was so delicious that I didn’t even care all that once I tasted the amazingly delicious finished dish.
