Keto Chicken Bacon Ranch Casserole

Tender chunks of chicken, loads of bacon, and a creamy ranchy sauce make this easy keto Chicken Bacon Ranch Casserole a family favorite. It’s low in net carbs, and with plenty of meaty flavors, it’s a dish you can make again and again!

Casseroles are a particular favorite of mine – they’re generally fairly easy, saucy, and loaded with tender meat. The whole family can eat them (my family eats their casseroles with carbs) and all of my casseroles are low in net carbs which makes them a win for me doing keto.

What You Need To Make keto Chicken Bacon Ranch Casserole

  • Oven-safe casserole dish
  • Skillet
  • Chicken breast – I buy boneless and skinless breast to make my life easy
  • Bacon
  • Heavy whipping cream
  • Shredded cheese – mozzarella and cheddar
  • Onion – fresh is best!
  • Garlic – fresh is best!
  • Ranch dressing powder
  • Parmesan cheese

How to Make This Easy Keto Chicken Casserole Recipe

  1. Cut the chicken breast into 1-inch cubes, season them with salt and pepper, and set aside.
  2. Meanwhile, chop the bacon into 1/2-inch pieces and fry it in a large skillet. When it’s about halfway cooked, add the onion and continue to cook until the onion is soft and translucent, about 5-6 minutes. Add the garlic and cook for an additional minute or until it is fragrant.
  3. Add the chicken breast chunks to the bacon and onion (and bacon fat.) Cook over medium-high heat until the chicken is just barely cooked through and is no longer pink inside.
  4. Turn off the heat add add the cream and mix in the ranch dressing powder.
  5. Fold in the mozzarella cheese, green onion, and parsley.
  6. Transfer this mixture to the oven-safe casserole dish and top with the cheddar and finally the Parmesan cheese.
  7. Bake it in a preheated 375-F oven for about 10-15 minutes or until everything is hot and bubbly. Serve and enjoy!

Chef Jenn’s Tips

  • Chicken breast, especially boneless and skinless, can be expensive. If watching your pennies, buy it on sale in bulk and freeze it, or use chicken thighs.
  • Hidden Valley makes a great Ranch Dressing powder. There are other brands, too. Do not use prepared ready-to-use ranch dressing as it won’t have the same flavor intensity.
  • Lightly season the chicken before browning it. There’s already a lot of salt in this dish from the cheese and ranch powder.

What To Serve With Keto Chicken Bacon Ranch Casserole

There’s oodles of flavor in this simple low carb Chicken Bacon Ranch Casserole, so don’t pick a side dish that will compete with the flavors. A simple side dish of air fryer asparagus or Skillet Cabbage with Bacon is all you need.

Can I freeze keto Chicken Bacon Ranch Casserole?

Yes, you can freeze this dish BUT there’s cream in it and cream doesn’t like to be frozen and thawed. You may end up with the cream separating when you reheat it.

Can I add broccoli to this Chicken Ranch Casserole?

You sure can! Add frozen and thawed broccoli florets or chopped broccoli just before popping it into the oven (about 1 cup is plenty.) If you’re using fresh broccoli, I’d blanch it in boiling water for a minute before adding it to the casserole or it won’t cook in the time it is in the oven.

Ingredients

  • 2 pounds boneless skinless chicken breast
  • 8 slices bacon
  • 1/2 cup diced yellow onion
  • 1 clove garlic minced
  • 1 cup heavy whipping cream
  • 2 tablespoons ranch dressing powder
  • 1 cup shredded mozzarella cheese
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons Parmesan cheese shredded or grated
  • 1/2 cup sliced green onions
  • 2 tablespoons chopped parsley
