Do not overmix the biscuit dough once the almond flour goes in. Stir just until everything is combined, or the biscuits turn out hard instead of flaky.

Chill the dough for about 30 minutes, it makes the sticky almond flour dough much easier to handle and cut. Pat it out to about half an inch thick and cut into 8 rounds with a cookie cutter, or even a mason jar in a pinch. Bake on parchment paper, and let the biscuits cool before slicing them in half, cutting them warm tends to squish them flat. Check your sausage label for starchy fillers while you are at it.

No sausage on hand? Fill the biscuits with fried egg, bacon, and more cheese instead. Mix up the cheese in the biscuits too, pepper jack, colby, or gouda all work well in place of cheddar. A sprinkle of shredded cheese on top before baking adds a nice extra touch if you want to dress these up a bit.

How to Make Breakfast Sandwiches with Sausage

Preheat the oven to 350°F. In a large bowl, combine the cream cheese, eggs, and cheddar cheese, stirring until smooth. Add the almond flour, baking powder, salt, heavy cream, and melted butter. Stir until just combined, don’t overmix.

Storage

These freeze beautifully. Wrap each sandwich tightly in plastic wrap, then place in a zipper-top freezer bag for extra protection, and freeze for up to 3 months.   • 2 eggs
  • 2 cups almond flour (extra fine)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup heavy whipping cream
  • 1 tablespoon butter (melted)
  • 1 pound breakfast sausage (rounds, or bulk)
  1. Preheat oven to 350-F.

  2. In a large mixing bowl combine the cream cheese, eggs and cheddar cheese. Stir until cream cheese is smooth.

  3. Add to the cream cheese mixture, almond flour, baking powder, salt, heavy cream and the melted butter. Stir until just combined – don't overmix or they'll be hard.

  4. Chill the dough in the fridge for about 30 minutes to make handling easier.

  5. Sprinkle almond flour on a hard surface. Pat the biscuit dough to about 1/2 inch thick and use a circle cookie cutter or a mason jar to cut the biscuits into 8 rounds.

  6. Put the biscuits on a parchment-paper lined sheet pan and bake for about 15 minutes at 350-F.

  7. Meanwhile, cook the sausage patties as per instructions on the package.

  8. To assemble, cut cooled biscuits in half and pop a sausage patty inside. Enjoy!
