This is one of the easiest ways I know to sneak in more vegetables, and my kids genuinely eat these without complaint. Keto zucchini pizza boats let everyone build their own, exactly the way they like it.

I put out all our favorite pizza toppings and everyone assembles their own boat before a quick trip in the oven. They come out hot, cheesy, and genuinely satisfying.
Look for thinner zucchini, about 5 to 6 inches long, dark green, firm, and unblemished. It scoops out more easily and cooks more evenly.

Chef Jenn’s Take on Zucchini Pizza Boats
Overcooking the zucchini is the easiest way to ruin these. Zucchini is mostly water, and it turns limp fast if left in the oven too long. Pull them out while they still have a bit of crunch.
Look for thinner zucchini, about 5 to 6 inches long, dark green, firm, and unblemished, they scoop out more easily and cook more evenly than thicker ones. Use a spoon to dig out a deep trench, removing the seeds as you go.
For strict keto, shred your own cheese rather than reaching for a bag of pre-shredded. Bagged cheese is tossed with an anti-caking agent that is technically a starch, adding carbs you do not need. Homemade pizza sauce is worth the extra step too.
This is genuinely a build-your-own dish, and that is really the appeal. Try a Greek version with olives, feta, and grilled chicken, an Italian version with sausage and mushrooms, or a seafood version with shrimp and scallops.
I am not a fan of freezing these, thawed zucchini turns limp and watery for my taste, though it is technically fine if you do not mind that texture.

What You’ll Love About Zucchini Pizza Boats
- Flexible enough for Greek, Italian, Classic, Veggie, or Seafood variations.
- A genuinely easy way to work more vegetables into dinner, kids included.
- Build-your-own format means everyone gets exactly the toppings they want.
Ingredients
- Zucchini – Thinner ones, about 5 to 6 inches, work best. Look for dark green, firm, unblemished ones.
- Pizza sauce – Homemade keeps this cleaner and saves on carbs.
- Mozzarella cheese – Shred your own for strict keto, since bagged cheese carries anti-caking starch.
- Pepperoni or toppings of choice – Build your own with favorites like olives, feta, sausage, mushrooms, spinach, or shrimp.

Wash the zucchini and trim each end. Slice lengthwise. Scoop out the seeds with a spoon, creating a deep trench down the middle of each half.

Fill each zucchini boat with 2 to 3 tablespoons of pizza sauce, a few tablespoons of cheese, and your favorite toppings. Bake on a sheet pan at 375°F for about 10 to 12 minutes, depending on the size of your zucchini, until tender-crisp.

Serve and enjoy!

Make It A Meal
If you love this build-your-own format, Chaffle Pizzas and Crustless Pizza are both worth adding to your pizza-night rotation. Sausage Parmigiana is another good Italian-night pairing.

Storage
These are best fresh. If freezing anyway, cook and chill fully, then package in freezer-safe containers for up to 3 months. Reheat from thawed in a 325°F oven or the microwave, though the texture softens more than fresh.

Hi, Jenn. This recipe looks great! I love all things pizza. Question about the nutrition panel: It says Carbohydrates 5, and Net Carbs 8. Is that backwards? Thanks for clarifying.
