- Heavy whipping cream
- Italian seasoning – Check the label for a sugar-free blend.
- Crushed red pepper flakes
- Salt and pepper
- Cooked chicken – Cubed or chopped. Leftover baked, grilled, or rotisserie chicken all work well.
- Monterey Jack cheese – Shredded. Mozzarella, cheddar, or colby all work as substitutes.
- Artichoke hearts – Drained and cut into large chunks. Don’t chop them too small, or they get lost in the casserole.
- Frozen chopped spinach – Thawed and squeezed dry. Fresh spinach works too, cook it down first before adding.
- Parmesan cheese
- Pork panko – Or almond flour, for the topping.
How To Make The Best Keto Chicken Florentine Bake With Artichoke Hearts

Preheat the oven to 350°F and lightly spray a baking dish with nonstick cooking spray.
Cook the onion in butter over medium heat until translucent, about 5 minutes. Add the minced garlic and cook for another minute, until fragrant.
Whisk the eggs, heavy whipping cream, Italian seasoning, salt, pepper, and red pepper flakes together in a large bowl.

Add the chicken, cheese, artichoke hearts, spinach, cooked onion, and garlic to the egg mixture. Mix well to combine everything evenly.

Melt the remaining butter and stir it together with the Parmesan cheese and pork panko to make the topping.
Transfer the chicken mixture into the prepared baking dish, then sprinkle the Parmesan and panko topping evenly over the top.

Bake for 15 to 20 minutes, until bubbly in the center and golden on top.

- 1/2 teaspoon crushed red pepper flakes
- 2 cups chopped cooked chicken
- 2 cups shredded Monterey Jack cheese
- 10 ounce package frozen spinach thawed and squeezed dry
- 1 cup artichoke hearts roughly chopped
- 1/4 cup Parmesan cheese grated
- 1/2 cup pork panko
- 1 tabelspoon butter melted
Instructions
- Preheat your oven to 350-F. Spray a baking dish with nonstick cooking spray.
- Cook the onion in the butter in a skillet over medium heat until translucent. Add the minced garlic and cook for a minute more.

- Cut the artichoke hearts into large chunks rather than chopping them small. Fine pieces disappear into the casserole and you lose the texture they add.
- Using fresh spinach instead of frozen? Cook it down first. Straight-from-the-bag fresh spinach releases too much water and can leave the casserole watery.
