Keto Sub in a Tub (No Bread, All the Sub Sandwich Flavor)

Lunchtime is where keto plans tend to fall apart, tempting fast food, coworkers bringing in treats, or just not having time to cook. Keto sub in a tub is my answer, a riff on the sub sandwich you get at a popular sub shop, minus the bread entirely.

Packing everything together, sauce included, is fine within a day or two, but it turns the vegetables soggy if it sits longer. Package the sauce separately for longer storage, this actually tastes even better a few days in, once the flavors develop.

Use what you already have on hand, this genuinely does not need fancy ingredients. Swap the cheese for feta, blue cheese, or sharp cheddar, change up the meats, or add different vegetables like olives, baby kale, spinach, or jicama. A pinch of dried Italian or Greek herbs adds a nice touch, or keep it simple with salt and pepper.

There is a lot of room to riff on this base recipe. Try a Cobb version with hard-boiled egg, blue cheese, and rotisserie chicken, or go Southwestern with grilled chicken, black soybeans, and a creamy jalapeno dressing. An old-school deli version with roast beef and horseradish is another good direction, and a Mediterranean version with tuna salad, red bell pepper, cucumber, and capers works well too.

Make It A Meal

Try the Southwestern version with grilled chicken, black soybeans, and Creamy Jalapeno Dip as the dressing. For a Mediterranean twist, swap in a scoop of Mediterranean Tuna Salad with red bell pepper, cucumber, and capers.

If you’d rather build a different composed salad plate, Antipasto Salad is another good building block.

Storage

This keeps well for a few days in the fridge. For longer storage, package the sauce separately from the meat, cheese, and vegetables, so the veggies do not sog out. It actually tastes even better after a day or two, once the flavors have had time to develop.

Ingredients

  • 3 ounces ham
  • 3 ounces turkey
  • 3 ounces roasted chicken
  • 1/2 cup lettuce
  • 3 ounces provolone cheese
  • 4 tbsp mayonnaise
