Keto Guacamole (Creamy, Ready in 10 Minutes)

If you usually reach for store-bought guacamole out of convenience, save your money for this instead. Keto guacamole is creamy, loaded with flavor, and takes just a handful of ingredients.

Skip the round, fat-looking avocados, they tend to have bigger seeds. Look for slightly longer, narrower ones instead.

Use enough lime, it is not just for flavor, it genuinely helps keep the guacamole from browning as fast.

Avocados do not ripen on the tree, so they are almost always hard and green when you buy them. Skip black, soft ones, they have been sitting too long. It takes 3 to 4 days to ripen on the counter, or slow that down in the fridge if you need more time. Look for very dark green, almost black skin, with a bit of give when pressed. Skip the round, fat-looking avocados too, they tend to have bigger seeds, look for slightly longer, narrower ones instead, they yield more flesh.

Knock the seeds and juicier bits out of the tomato before adding it, that keeps the guacamole from getting too thin. De-seed the jalapeno and remove the white ribs too, to keep the heat under control.

Press plastic wrap directly onto the surface if storing this, in a narrow container. If the top discolors anyway, just scrape that layer off, the rest underneath should be fine. And one safety note, avocados contain a toxin dogs cannot tolerate, so don’t share your guacamole with the family pet.

  • Lime – Fresh squeezed. Use enough that you can taste it, it also helps prevent browning.
  • Salt and pepper

Cut the avocados and remove the seed. Scoop the flesh into a bowl. Mash the avocado with the back of a fork.

Add the finely diced jalapeno, onion, tomato, cilantro, and lime juice. Mix well to combine. Add a pinch of salt, then serve.

Make It A Meal

This is best enjoyed fresh, within a few hours of making it. If storing, press plastic wrap directly onto the surface and keep it in a narrow container in the fridge. It can also be frozen, wrapped tightly, for up to 3 months.

Ingredients

  • 4 avocados
  • 2 tablespoons red onion diced
  • 2 tablespoons jalapeno diced
