Keto Chicken Bacon Ranch Casserole (Easy Low-Carb Dinner)

Casseroles are one of my favorite things to cook because they are saucy, loaded with meat, and genuinely easy. This keto chicken bacon ranch casserole is the one my family eats without asking whether it is keto or not.

I keep my own plate keto while the rest of my house eats theirs with a side of rice, and this recipe works for both without me cooking two separate dinners.

This is a genuine weeknight recipe for me, not a special-occasion one, since it comes together in about 35 minutes.

Chef Jenn’s Take on Chicken Bacon Ranch Casserole

Most chicken bacon ranch casseroles taste like plain cheesy chicken with a vague ranch smell somewhere in the background. The flavor is there, it is just weak.

The fix is using ranch seasoning powder instead of prepared liquid ranch dressing. The powder is concentrated, so two tablespoons carries real ranch flavor through the whole dish. Liquid dressing is already diluted with oil and buttermilk, so it disappears once it hits the cream and cheese. Check the label on whatever ranch seasoning you use, since brands vary in sodium and carb count.

Cheese order matters too. I fold the mozzarella into the filling itself, then save the cheddar and Parmesan for the top. That gives you a melty, cohesive filling underneath and a browned, bubbly top instead of one uniform layer of melted cheese all the way through. Watch it closely once it hits the oven, since it only needs about 10 to 15 minutes to get there.

What You’ll Love About Chicken Bacon Ranch Casserole

  • It works for a mixed-diet household, since the flavor is strong enough that nobody asks if it is keto.
  • It comes together in about 35 minutes, which makes it realistic for an actual weeknight, not just a plan.
  • It reheats well enough for lunches through the week, so one casserole covers more than one dinner.

Cut the chicken breast into 1-inch cubes, season them with salt and pepper, and set aside.

Meanwhile, chop the bacon into 1/2-inch pieces and fry it in a large skillet. When it’s about halfway cooked, add the onion and continue to cook until the onion is soft and translucent, about 5-6 minutes. Add the garlic and cook for an additional minute or until it is fragrant.

Transfer this mixture to the oven-safe casserole dish and top with the cheddar and finally the Parmesan cheese.

Bake it in a preheated 375-F oven for about 10-15 minutes or until everything is hot and bubbly. Serve and enjoy!

Make It A Meal

I keep the sides simple with this one so they don’t compete with the ranch flavor. My Air Fryer Asparagus with Garlic or my Skillet Cabbage with Bacon both work well alongside it.

bake until bubbly and brown

Storage

Store in an airtight container in the fridge for up to 4 days. You can freeze this one, but the cream can separate once it thaws and reheats, so the texture will not be quite as smooth. Reheat gently in the oven rather than the microwave for the best result.

Frequently Asked Questions

Can I freeze keto Chicken Bacon Ranch Casserole?

Yes, you can freeze this dish BUT there’s cream in it and cream doesn’t like to be frozen and thawed. You may end up with the cream separating when you reheat it.

Can I add broccoli to this Chicken Ranch Casserole?

You sure can! Add frozen and thawed broccoli florets or chopped broccoli just before popping it into the oven (about 1 cup is plenty.) If you’re using fresh broccoli, I’d blanch it in boiling water for a minute before adding it to the casserole or it won’t cook in the time it is in the oven.

Is Chicken Bacon Ranch Casserole easy to make?

Yes! With a handful of ingredients, this is an easy and tasty casserole to make. It’s quick enough to be made and eaten on busy weeknights, too!

Recipe Card Tips

  • Chicken breast, especially boneless and skinless, can be expensive. If watching your pennies, buy it on sale in bulk and freeze it, or use chicken thighs.
  • Hidden Valley makes a great Ranch Dressing powder. There are other brands, too. Do not use prepared ready-to-use ranch dressing as it won’t have the same flavor intensity.
  • Lightly season the chicken before browning it. There’s already a lot of salt in this dish from the cheese and ranch powder.
