Chef Jenn’s Take on Chicken Marsala
Traditionally, you would deglaze the pan with Marsala and add a bit more at the end, but this keto version adds it all at the end, for maximum flavor and fewer carbs.
Slice thick chicken breasts horizontally in half so they are no more than half an inch thick, they cook too slowly otherwise. Get the oil and butter really sizzling hot before adding the chicken, for real golden brown color. Sautee the mushrooms, shallots, and garlic until they release their liquid, about 4 to 5 minutes. Deglaze with the broth, add the cream, and reduce by about a third. Add the chicken back with its juices, simmer to 165 degrees, then add the Marsala and whisk in the remaining butter. Thicken with xanthan gum if you want, no more than a quarter teaspoon, resist adding more too soon, whisk it in to avoid lumps.
A reader once asked about dredging the chicken in almond flour, like a traditional flour dredge, and my honest answer is almond flour behaves nothing like wheat flour, it will not stick properly and ends up making the sauce gloppy and grainy. Mushroom variety is flexible, button, white, portobello, or cremini all work.

- Chicken bone broth – Homemade adds real depth, or use low-sodium store-bought.
- Heavy whipping cream – Full fat.
- Butter – Salted, divided.
- Avocado oil – For searing the chicken.
- Green onions and parsley – For finishing and garnish.
- Xanthan gum – Optional, no more than 1/4 teaspoon.
How To Make Keto Chicken Marsala

If your chicken breasts are thick, slice them half horizontally. Season the chicken with salt and pepper, then brown them in a combination of sizzling olive oil and butter.

Remove the seasoned chicken and add the mushrooms, garlic, and shallot to the same pan.

Deglaze the pan with chicken broth, then add the heavy cream and reduce by about one-third.
Add the browned chicken breasts, add the Marsala wine, and add the green onion to the pan. Simmer until the chicken is cooked through.

Add a tablespoon of fresh minced garlic (or a teaspoon of garlic powder) to enrich the sauce and thicken the sauce with 1/4 tsp of xanthan gum (optional). Simmer over medium heat until the sauce thickens.

Garnish with chopped parsley, serve, and enjoy your keto creamy chicken Marsala dinner!

There are also dry and sweet versions – I find the dry Marsala wine makes the tastiest creamy Marsala sauce. Resist anything labeled Marsala cooking wine as these are often loaded with salt. If you can’t drink it – don’t cook with it!

Ingredients
- 1 tablespoon avocado oil
- 3 tablespoons butter divided
- 1 1/2 pounds chicken breast boneless, skinless
- 12 ounces mushrooms washed and sliced
- 2 tablespoons shallots diced
- 1 tablespoon garlic minced
- 1/4 cup marsala
- 1 cup chicken bone broth
- 1 cup heavy whipping cream
- 1/4 cup green onions sliced
- 2 tablespoons parsley chopped
- 1/4 teaspoon xanthan gum
Instructions
- Bring 1 tablespoon of butter and the avocado oil to a sizzle in a large skillet. Season the chicken and then brown it on both sides for 2-3 minutes over medium-high heat or until lightly golden brown. Set the chicken aside.
- Add another tablespoon of butter and sauté the mushrooms, shallots, and garlic until the mushrooms are tender and have given up their liquid – about 4-5 minutes.
- With the mushrooms and shallots still in the pan, deglaze the pan with the bone broth and then add the heavy cream. Turn the heat down to a simmer and reduce the sauce by about a third.
- Put the chicken and any juices back into the sauce and simmer until the chicken is cooked through to 165-F. Add the Marsala wine and whisk in the remaining butter. Add the green onions.
- Thicken with xanthan gum (optional), top with parsley, and serve!

Recipe Card Tips
- Thick chicken breasts take too long to cook in this low-carb keto dish. You want them at most 1/2-inch thick. If your breasts are thicker than that, slice them horizontally in half into two mostly even pieces.
- Get the olive oil (or avocado oil) and butter sizzling hot to get a bit of brown color on the breasts – golden brown food is tasty food!
- You can certainly skip the xanthan gum in this keto Chicken Marsala recipe. If you do use it, don’t use more than 1/4 teaspoon to make the creamy Marsala sauce. Resist the urge to add more – it will thicken up as it cooks and sits. If you really want a thicker sauce, add 1/8 teaspoon of xanthan gum and let it thicken. Use a whisk to whisk it in and to avoid lumps.
- Change up the mushrooms in this keto-friendly Chicken Marsala recipe! Quartered or sliced mushrooms work well in this dish, and you can use button mushrooms, white mushrooms, portobello mushrooms or cremini mushrooms.

Before keto, of course, I always dredged with regular flour and it was so yummy.

Almond flour doesn’t behave like regular wheat flour, and so in this recipe you’d have a gloppy, grainy sauce. The almond flour wouldn’t stick to the chicken and would end up in your sauce. You can try it, if you don’t mind the texture of ground almonds in your sauce, but I prefer a smoother sauce. ~Jenn
