Enjoying desserts in a keto lifestyle can be a challenge. I either end up with tons of leftovers, or I spend too much on packaged goods only to find out that they’re not really keto at all (always read the nutrition label)!. That’s why I love mug cakes.
I’m the only one in my family doing keto and so I need desserts just for me; a mug cake is just the thing! Made with common ingredients and ready in under 5 minutes, I can have a hot and tasty treat in no time!
Ingredients
- Almond flour – Use super-fine grind if you can find it.
- Coconut flour
- Baking powder
- Butter – I use salted butter. Add a pinch of salt if you use unsalted butter.
- Egg – Just 1
- Brown sugar substitute – Use your favorite brand.
- Lemon juice – Freshly squeezed.
- Lemon zest
How To Make The Best Keto Lemon Mug Cake
- Mix the dry ingredients in a small bowl.
- Mix the melted butter, egg, lemon juice, and lemon zest in another small bowl.
- Mix the wet and dry ingredients together.
- Butter the insides of a large mug.
- Add the batter to the mug and microwave it on high for about 90 seconds.
- Check if your mug cake is done, then dig in!

- Start with a mug that’s much larger than the volume of cake batter. The cake will double in size as it cooks, and you don’t want it spilling over the top of the mug.
- Don’t overmix the ingredients! It’s fine if there are a few small lumps.
- Garnish your keto Lemon Mug Cake with whipped cream and a bit of lemon zest.
- Insert a toothpick or thin knife into the center of your mug cake to see if it is cooked. There should be a few clingy crumbs but no raw batter. If you see batter, give it another 10-15 seconds to cook.
