Heat the almond milk, heavy cream, cocoa powder, and stevia in a small saucepan over medium heat, whisking constantly to fully dissolve the cocoa. Bring the mixture to a gentle boil and cook for about 3 minutes, then remove it from the heat.

While the hot chocolate heats, add the instant coffee, Lakanto Gold, and boiling water to a mixing bowl. Use a hand mixer to whip the mixture for 3 to 4 minutes until it becomes thick, pale, and fluffy. A deep mixing bowl helps prevent splashing while whipping.

Divide the hot chocolate evenly between two mugs. Spoon the whipped dalgona coffee over the top of each cup. Serve immediately while hot.
