What’s The Difference Between Keto Sausage Stuffing and Keto Dressing?

Keto stuffing is typically stuffed inside the bird. Keto dressing is “dressed” alongside the bird, as a side dish cooked separately from the bird.

Stuffing tends to have more flavor as the turkey juices infuse the stuffing with goodness. But, there are always safety issues where your stuffing needs to reach 165-F to ensure it is safe to eat (from any raw turkey blood that might have seeped into it). Stuffed turkeys also take longer to bake.

An advantage to dressing is that you can make it ahead of time and just reheat before serving, and of course, the bird will take less time to cook with an empty cavity.

How To Make Low Carb Sausage Stuffing

  1. Get the sausages out of the casing and cook them in the skillet, breaking them up into small chunks. Add the onion and celery and cook until soft.
  2. Rice the cauliflower by putting it in the food processor or using a cheese grater to rice it.
  3. Add the riced cauliflower to the skillet and cook a few extra minutes until tender.
  4. Season with garlic powder, sage, salt and pepper.
  5. Serve and enjoy!

Chef Jenn’s Tips

  • Italian sausage, garlic sausage, Oktoberfest sausage and more will all work fabulously in this recipe but feel free to experiment with your favorite. Just make sure to start with raw sausage, not smoked or pre-cooked.
  • Get herby! Thyme, marjoram, ground bay leaves and even a touch of red pepper flakes will jazz up this recipe even more.
  • Start with fresh cauliflower – it makes the dish so much nicer when the cauliflower has more texture.
  • Don’t like onions or you don’t want the extra carbs? Skip them!

Is Keto Stuffing Freezer Friendly?

Yes! The big challenge will be to get out as much air as possible before freezing. Put the cold keto dressing into a zipper-top bag and press out the extra air, or use my favorite vacuum sealer.

Is stuffing keto?

It sure can be! Limit the onions and skip the carrots if you’re doing strict keto.

Can keto stuffing be made ahead of time?

Absolutely – make this keto side dish 3-4 days ahead of your feast and just reheat it before serving.

How long does it take to make keto dressing?

Keto Sausage Stuffing

Filled with flavor and really quite easy, this keto Stuffing or keto Dressing recipe is the only one you need for your holiday turkey!

Ingredients

  • 2 sausage links
  • 3 cups riced cauliflower
  • 1/2 cup onion
  • 1 cup celery
  • 1 tsp garlic powder
  • 1 tsp dried sage
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

  • Remove the sausage from the casing, if necessary, and brown it in a skillet with a touch of cooking oil if your sausage isn’t fatty.
  • Add the diced onion and celery and cook until the sausage is no longer pink, about 8 minutes.
  • Add the riced cauliflower, along with the dried sage and garlic powder. Mix well and cook an additional 2-3 minutes or until the cauliflower is tender crisp.
  • Add salt and pepper if necessary, and serve, or stuff into your holiday bird before baking.
