Taste-test the raw meat mixture safely rather than sampling it uncooked. Microwave about a tablespoon of it for 20 seconds, then taste to check the salt and pepper, adjusting the rest of the mixture if needed.
Fold in the chopped tomato and mushrooms carefully rather than stirring aggressively, or you will moosh them into the meat instead of keeping their texture intact.
A few readers found their bacon stayed raw and chewy even after the meatloaf itself reached 165 degrees. The fix is to use bacon ends and pieces, a meatier cut that cooks better when chopped small, or to par-cook regular bacon briefly before mixing it into the meat if that is what you have on hand.
This is flexible on protein too, ground turkey or chicken both work, or a combination of your favorites. Lean beef and pork are the best choice here specifically, since the bacon already supplies plenty of fat on its own.
On the sauce, some readers prefer a small amount of real ketchup over a sugar-free brand containing sucralose, both are valid choices depending on your own preference.

- Ground beef and pork blend – Or half lean ground beef and half lean ground pork if a blend isn’t available.
- Bacon – Chopped small. Bacon ends and pieces cook more evenly than standard slices.
- Dehydrated onion flakes – Onion powder works as a substitute in a smaller amount.
- Garlic – Fresh, minced.
- Mushrooms – Chopped.
- Tomato – Diced.
- Egg – For binding.
For the sauce:

- Sugar-free ketchup – Or a small amount of real ketchup, based on your own preference.
- Brown sugar substitute – Your preferred brand.
- Mustard powder – Adds tang to the sauce.
How To Make This Mini Easy Keto Meatloaf Recipe

In a large bowl, mix the meat, bacon, salt, pepper, garlic and onion, and the egg until well combined.

Add the chopped mushrooms and tomatoes and blend carefully to not moosh up all the veggies.

Form into 6 large balls, then flatten them slightly. Put each flattened ball into a muffin tin or into an individual size casserole dish.

Bake at 350-F for 35-40 minutes. Cook until an internal temp of 165-F has been reached. Use a good digital thermometer!
To make the sauce, combine the SF ketchup, mustard powder, and So Nourished brown sugar in a small bowl.

About 10 minutes before the keto meatloaf muffins are finished, spoon the sauce equally over the top of each meatloaf. Serve and enjoy!

Ingredients
- 1 1/2 pounds ground beef and pork blend
- 4 slices bacon chopped
- 1 each egg
- 1 tablespoon dried onion flakes
- 1 clove garlic minced
- 1 cup mushrooms chopped
- 1 cup tomato diced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Sauce
- 3/4 cup sugar free ketchup
- 1/4 cup So Nourished Brown Sugar
- 1 tablespoon mustard powder
Instructions
- Blend the ground meat with the chopped bacon, dried onion, garlic, salt, and pepper, and egg. Mix well.
- Add the chopped tomato and mushrooms to the meat mixture, folding it in carefully so you don't moosh up all the tomato.
- Divide the meat mixture into 6 large balls, and flatten each one a wee bit. Pop them into your casserole dishes or a muffin tin.
- Bake at 350-F for about 20 minutes. Remove them from the oven and top with the sauce then continue cooking another 10-20 minutes or until the internal temperature reaches 165-F.
To Make The Sauce
- Blend the SF ketchup, mustard powder, and So Nourished brown sugar in a small bowl.

GREAT flavor! My only challenge was the completely uncooked bacon. Internal temp was past 165 but bacon was mostly raw and chewy. I might try to partially fry the bacon and then add, along with grease, to the meatloaf mix.

I will say, that I did NOT use the sugar free ketchup, though. The brand you recommend has Sucralose, which is SO very very bad for our bodies! I’d rather have the 4 carbs that are in real ketchup than put that stuff in my body…just sayin’ 😁
