Keto Ranch Jalapeno Poppers (Bacon-Wrapped, Air Fryer)

These were on the menu at almost every bar when I lived in Texas, and I never found them quite as easily once I moved away. Keto ranch jalapeno poppers are my own version, made in the air fryer whenever the craving hits.

Once, working as a chef, I had to prep dozens of jalapenos without gloves, and my hands were genuinely on fire for hours afterward. Wear gloves if you have them, and if you do not, wash your hands immediately and avoid touching your face or eyes.

Shop for jalapenos that are dark green, unblemished, and uniform in size for even cooking. More striations, the thin white stress lines on the skin, generally mean a hotter pepper. Watch out for poblano peppers too, they look like giant jalapenos but are not the same thing. Straight peppers are easier to work with than bent ones, and skip frozen entirely.

To control the heat, remove the seeds and membrane, or leave them in if you want these extra spicy. Use a whole slice of bacon to wrap each half, not a partial piece, or it tends to fall off during cooking.

No ranch seasoning powder? Two tablespoons of my own Keto Ranch Dressing works as a substitute. Add half a teaspoon of chipotle powder to the filling for a smoky kick, and use thick-cut bacon if you want these extra meaty.

  • Jalapenos – Dark green, unblemished, and uniform in size. Watch out for poblano peppers by accident, they look similar but are not the same.
  • Ranch seasoning powder – Or 2 tbsp of Keto Ranch Dressing as a substitute.
  • Cream cheese – Full fat, softened.
  • Cheddar cheese – Shredded.
  • Green onion – Sliced thin.
  • Bacon – One whole slice per popper half, not a partial piece, or it falls off during cooking. Thick-cut for extra meatiness.

How to Make Ranch Jalapeno Poppers

Wash the jalapenos and cut them lengthwise, removing the seeds and membrane. Wear gloves if you have them.

Combine the softened cream cheese, cheddar cheese, ranch powder, and green onions in a bowl until well mixed.

Fill each jalapeno half with 1 to 2 tablespoons of the filling, then wrap in a whole slice of bacon.

Cook in the air fryer at 400°F for about 10 to 15 minutes, until the bacon is cooked and starting to crisp. Let cool slightly and serve.

Storage

These freeze well after baking. Package in an airtight, freezer-safe container for up to 3 months. Thaw overnight in the fridge, then reheat in the air fryer or oven until warm and crispy again. Refrigerated, they keep for 2 to 3 days.

  • 6 jalapenos halved and seeded
  • 1 tablespoons ranch dressing powder
  • 4 ounces cream cheese softened
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup green onion sliced finely
  • 1 pound bacon
