Keto Cobb Salad (Mix and Match, Meal Prep Ready)

This is refreshing but still genuinely hearty, a full meal in a bowl rather than a side salad pretending to be dinner. Keto Cobb salad comes together fast, especially if you use leftover grilled or rotisserie chicken.

Chef Jenn’s Take on Cobb Salad

Adding the avocado too early is the easiest way to end up with a browned, unappetizing salad by the time you sit down to eat. Add it right before serving, every time.

If you’re meal prepping, keep the dressing completely separate from the greens until you’re actually ready to eat, mixing it in ahead of time turns the lettuce soggy. Wash and prep the lettuce ahead too, then store it in a sealed zipper bag with a paper towel inside to soak up excess moisture.

Watch the higher-carb vegetables if you’re tracking closely, red onion, tomatoes, and red bell pepper are all fine in moderation, but they add up faster than the leafy greens do. Use a plastic cutting board rather than wood while prepping everything, it’s simply more hygienic for raw chicken and produce sharing the same space.

This is genuinely customizable. Swap in grilled shrimp for the chicken, or skip the chicken entirely for a vegetarian version. Beyond a classic Ranch, try a chipotle-spiked version, or use Creamy Jalapeno Dip as an unconventional but genuinely good dressing.

Wash and dry the lettuce, using a plastic cutting board for prep. Slice or chop the chicken, cucumber, tomatoes, and bell pepper into bite-sized pieces.

Layer the lettuce in a bowl or on a plate, then arrange the chicken, bacon, vegetables, and hard-boiled egg on top. Add the avocado last, right before serving. Drizzle with dressing and serve.

Washed lettuce keeps for a few days in an airtight bag with a paper towel to absorb moisture. Chicken, eggs, and bacon keep in the fridge for up to a week. Assembled salads keep a day or two, but store the dressing separately so the greens do not go soggy.
