This is the one I make when I want dessert for breakfast without actually lying to myself about it. Blueberries blended right into the base give this keto chia pudding a purple color and real fruit flavor in every spoonful, not just seeds floating in milk.

I make a batch on Sunday and eat it most mornings that week, since it holds up in the fridge far longer than most keto breakfasts do. Blending the blueberries into the milk first, instead of stirring them in whole, is what gives this its color and texture.

Chef Jenn’s Takes on Keto Blueberry Chia Pudding
Most chia pudding recipes just stir whole blueberries into the milk and chia seeds, and what you get is pudding with fruit sitting in it rather than fruit actually running through it. The flavor stays separate from the base instead of being part of it, and the color barely changes from plain white, which makes the finished pudding look like an afterthought rather than something built around blueberries.
Blending the blueberries into the almond milk before adding the chia seeds solves both problems. The base turns a real purple color and the blueberry flavor is in every spoonful, not concentrated in whatever bite happens to have a berry in it. Give it the full two hours in the fridge, or overnight if you can manage it. Chia seeds need that time to fully absorb the liquid, and pulling it early leaves you with a looser, more separated texture instead of a properly set pudding.

What You’ll Love About Keto Blueberry Chia Pudding
- The blueberries get blended right into the base, so the flavor and color run through the whole thing instead of sitting in a few lucky bites.
- It keeps for up to 5 days in the fridge, which makes this one of the easiest genuine meal-prep breakfasts I make on repeat.
- It works just as well as a light dessert as it does breakfast, so one batch covers two very different cravings.
Ingredients

- Blueberries – Fresh work best, but you can use frozen.
- Chia seeds – It doesn’t take many!
- Almond milk – I love the lightly sweet flavor of almond milk in this recipe.
- Lemon zest – The lemon adds a lovely citrusy note to the keto dessert.

Add the washed berries and almond milk to a blender or food processor and pulse until smoothe.

Combine the pureed blueberry-milk mixture with the lemon zest and chia seeds. Mix very well.

Divide the mixture between 2 cute jars or small bowls.

Cover and refrigerate for at least 2 hours or overnight. Enjoy!

Make It A Meal
This works as a stand-alone breakfast on its own, but it’s just as good as a light dessert after dinner. Serve it alongside Grilled Veggies earlier in the meal if you’re planning a full day of eating light.
For a bigger breakfast spread, put this out next to Keto Blueberry Muffins so there’s a warm option and a cold one on the table. If you’re serving this as dessert for guests, a glass of Blueberry Sparkle Cocktail keeps the blueberry theme going through the whole meal.

Storage
This keeps in the fridge for up to 5 days in an airtight container or jar, which makes it a genuine meal-prep breakfast. It’s not a good candidate for the freezer, since chia pudding separates and turns watery once thawed.
Frequently Asked Questions
Chia pudding is perfect for low-carb and keto lifestyles, but also for those who are diabetic. Chia seeds are high in protein, are a good source of fat, and are high in fiber. When you make the pudding with almond milk (or coconut milk) you can also cut down on the saturated fats. With such a rich source of protein and fiber, chia seeds are perfect for anyone, but they’re especially good for those watching their carbs.
Heck yes. You just need a blender and 4 ingredients. Blend, mix, and let it work its magic in the fridge for a few hours.
I sure do! I love it for breakfast – it’s kind of like oatmeal – but if I want it for dessert I’ll whip a bit of heavy whipping cream to put on top to make it a special dessert.

Notes
Recipe Card Tips
- Give it the full chilling time, or longer. Chia seeds need time to fully absorb the liquid, and pulling the pudding early leaves it looser and more separated than a properly set batch.
- Blend the blueberries into the milk rather than stirring them in whole. This is what gives the pudding its color and spreads the flavor through every spoonful instead of just a few bites.
