Keto Cheeseburger Soup

Thick, creamy, cheesy, and loaded with tender beef, Keto Cheeseburger Soup is one of those recipes that just puts a smile on your face. This soup is low in net carbs, and it’s an easy fix that’s perfect for lunch or dinner. On the table in about 30 minutes, this keto soup recipe is too good to pass up!

Loaded with flavor but low in net carbs, this hearty and satisfying soup has all the flavors of a cheeseburger, minus the bun! It’s a thick and chunky soup, and it’s well-balanced so it’s not just melted cheese in a bowl (not that there’s anything wrong with melted cheese but this is soup!) How To Make Cheeseburger Soup Keto

Certain common soup ingredients are very high in carbs, making them not-so-great choices when following a keto lifestyle. The culprits are: wheat flour (used for thickening creamy soups), potatoes, lots of onions, lots of carrots, and pasta.

To make this soup keto, we’re doing away with the flour and thickening the soup instead with cheese. There are two kinds of cheese in this recipe, and they’re well-balanced and not too salty.

In addition, I’ve limited the garlic and onions (higher in carb veggies) and eliminated the carrots. The result is a creamy and delish soup that’s low in net carbs and perfect on a keto diet.

What You Need To Make Keto Cheeseburger Soup

  • A heavy bottomed soup pot or Dutch oven
  • Ground beef – I use 80/20 in this recipe
  • Onion
  • Celery
  • Garlic – fresh is best
  • Spices: dried oregano, dried parsley, dried basil
  • Beef broth or beef stock – look for low or no-sodium added beef broth (you can use chicken broth for a milder flavor)
  • Cream cheese
  • Cheddar cheese
  • Heavy whipping cream
  • Sour cream

There’s no xanthan gum in this soup recipe!

What Kind of cheese Should I use In Cheeseburger Soup?

There are two kinds of cheese in this keto soup recipe: cream cheese and sharp cheddar cheese. The cream cheese gives the soup a lovely, thick, and velvety texture while the sharp cheddar gives it a bit of a cheesy edge.

You could use either white or yellow sharp cheddar, or for a milder cheese flavor, try marble cheese, Monterey jack, or muenster. To spice it up, add some pepper jack, and feel free to mix and match with the cheese to personalize this soup just how you like it. Whatever you pick, save some extra cheese to garnish the soup.

How To Make Keto Cheeseburger Soup

This soup only takes about 30 minutes from start to finish, so it’s a hearty meal that you can enjoy even on the busiest weeknights. Here’s how to do it:

  1. Brown the ground beef in the bottom of a Dutch oven, skillet, or soup pot. If there’s not enough fat in your ground beef, add a tablespoon or two of avocado oil
  2. Add the finely diced onions, celery, and garlic. Cook until the onions are softened and translucent.
  3. Add the spices and cook an additional minute until they’re fragrant.
  4. Spoon out any excess fat, then add the beef broth and heat the soup to a boil. Simmer for 15 minutes with a lid on.
  5. Turn the heat off and add the cream cheese, breaking it up so that it melts into the hot broth. Stir well. Turn the heat up for a minute or two if your cream cheese isn’t melting.
  6. Add the shredded cheddar cheese and stir until melted.
  7. Add the heavy cream and heat the soup over low heat until it is heated through.
  8. Turn the heat off and whisk in the sour cream. Top with your favorite cheeseburger garnishes and enjoy this low carb cheeseburger soup!

How to Garnish This Keto Cheeseburger Soup Recipe

What do you like on your cheeseburgers? Most of those toppings will also go on this lush, easy low carb soup recipe, minus the mustard! Here are my suggestions:

  • A pinch of shredded sharp cheddar
  • Thinly sliced green onions
  • Diced or sliced pickle – yes, pickle! Go for dill pickles and add a blast of flavor and crunch!
  • Crispy bacon – make it bacon cheeseburger soup with crumbled bacon on top
  • Red pepper flakes – add a touch of spice with a sprinkle of red pepper flakes

Stir in sour cream, garnish, and serve!

Chef Jenn’s Tips

  • 80/20 ground beef is my pick for this recipe, but you could switch things up by using ground chicken, ground turkey, or even pork. Or, go exotic with ground buffalo, ostrich, or venison.
  • Cheese is inherently salty. Control the sodium in this soup by using low or no-sodium added beef broth, and check for seasoning before adding any salt.
  • The sour cream adds a bit of acidity which helps to balance out the cheese, but you can skip this if you don’t have any on hand.

What To Have With Cheeseburger Keto Soup

This thick, hearty, and satisfying soup is a meal in a bowl, but sometimes I like to pair it with other dishes for a bigger meal. This keto beef soup will pair nicely with this chopped Caprese Salad, Greek Salad, or just a side dish of tasty veggies like Spaghetti Squash with Parmesan & Herbs.

Can I Freeze Keto Cheeseburger Soup?

Yes, you sure can! It’s even better in the fridge the next day, but if you want to freeze it, here’s how I do it:

Ingredients

  • 1 pound lean ground beef

    I made this soup and it was wonderful. Only thing I’ll change is I used white cheddar and I think it would look better with yellow. Next time, I’ll add bacon too! Yum yum.

    This was really delicious! I think it may have been a little high in fat for my SO, but he’s not on keto. For me, it was perfect! I plan on adding this to my normal rotation. Need to look into getting some souper cubes to freeze it! Definitely give this a try (plus it’s easy peezy!)
