Chef Jenn’s Take on Blueberry Fat Bombs

Cook the blueberries until they have popped but have not gone totally liquid, about 5 minutes over medium heat. That texture matters for how the finished fat bomb holds together.

Blend the cream cheese, cooked blueberries, vanilla, powdered sweetener, and most of the coconut together with a hand mixer, holding back a portion of the coconut for later. Freeze that mixture for about 40 minutes, just until it is firm enough to roll into balls. Shape into 8 balls, then roll each one in the coconut you held back earlier. Freeze again until hard.

These are meant to be small, a bite or two whenever you need a bit more fat in your day, not a full dessert-size treat. Raspberries or blackberries work in place of blueberries here too, if you want a different flavor.

Keep them in a plastic container in the freezer for up to 3 months, and let them thaw for just a few minutes before eating, they genuinely do taste like a bite of blueberry cheesecake.

How To Make Blueberry Keto Fat Bombs

Cook the blueberries in a saucepan over low heat until they’re softened and popped, but not total liquid.
