Trying to roll these into balls before the mixture has frozen enough is the fastest way to make a mess. Freeze it for about 2 hours, until mostly solid, before you attempt to roll it.
Whip the cream cheese and sweetener together in one bowl, and whip the heavy cream to stiff peaks in a separate bowl, then combine the two. Skipping that separate step is why some cheesecake balls come out dense instead of light and fluffy. Use a powdered sweetener, not granulated, which will not mix in smoothly. Fold in the raspberries gently once everything is combined, you do not want to mash them up.
Toast the pecans in a single layer at 325 degrees for 5 to 10 minutes, watching closely since nuts burn easily. Let them cool slightly, then pulse in a food processor until finely ground.
Drop spoonfuls of the frozen mixture into the ground pecans first, then roll into balls, it keeps your hands much cleaner than rolling first and coating after. Try to get a bit of raspberry into every ball. Not a pecan fan? Swap in your favorite toasted, ground nut instead.

In a clean bowl, whip the heavy cream until stiff peaks form. Set aside.

In another bowl, whip the softened cream cheese with the powdered sweetener until well blended.

Combine the whipped cream and cream cheese, mixing well with a hand mixer. Gently fold in the raspberries with a spatula, being careful not to mash them.

Freeze for about 2 hours, or until mostly firm.

Drop spoonfuls of the frozen mixture into the ground pecans, then roll into balls. Freeze until solid. Let thaw a minute or two before eating.

Instructions
- In a clean bowl, whip 1/2 cup of heavy whipping cream until still peaks form. Set aside.
- In another bowl, whip the softened cream cheese and So Nourished powdered sugar until well blended.
