Chaffles going wrong usually comes down to the waffle maker itself, not the batter. Spray or lightly butter both the top and bottom plates before you start, and spread the cheese evenly across the iron before closing the lid. If the lid sticks when opening, do not force it, give it another minute and try again. If it comes out undercooked, pop it back in for another minute or two.
Skip the salt in the batter entirely, the cheese already brings plenty on its own. A half teaspoon of Italian seasoning stirred in adds real flavor if you want it. Every waffle maker holds a slightly different amount of batter, so expect some trial and error the first time.
These can be made ahead too. Cook the chaffles, refrigerate them, and top and bake whenever you are ready to eat. The nutrition figures below cover just the chaffle, sauce, and base cheese, not your toppings, so add those separately based on what you choose.
Get creative with toppings beyond the usual pepperoni. Spinach, roasted red bell pepper, and salami all work well here.

Whip the egg whites with a fork until frothy. Blend in the almond flour and sour cream, then mix well. Add half the shredded mozzarella to the batter and mix to combine.
Cook the chaffles in a mini waffle maker using half the mixture at a time, until golden brown.

Top each chaffle with pizza sauce, the remaining shredded mozzarella, and your favorite toppings.

Bake on a sheet pan in a preheated 375°F oven for 5 to 7 minutes, then broil for about 2 minutes to get everything golden brown and bubbly.

Serve hot.
