These taste close enough to the Starbucks version that you may stop wondering why you ever paid for them. Keto egg bites with spinach and cheese cost well under a dollar to make, and they are ready in about 12 minutes.

I use a double cheddar blend here, plus a splash of cream and some green onion for richness. An egg bite maker with silicone cups makes this nearly foolproof, no oil or butter needed to keep them from sticking.

This is a flexible base too. Swap the cheese, skip the onion, or fold in chopped ham or bacon if you want more.

A wide, browned top with a shriveled, pale bottom almost always means overfilling. Fill the cups about three-quarters full, not all the way, since they puff up as they cook. Overcooking causes the same problem in a different way, the texture turns rubbery and unpleasant instead of soft and custardy.

The ratio of cream and cheese to egg matters more than people expect too. Too little of either and the texture suffers, even if the cook time and fill level are both right. Fill one of the egg cups with water and add it to the base of the maker before you start, following your appliance’s instructions, that’s what creates the gentle steam these need to cook evenly.

The silicone cups don’t need any oil or butter to keep the eggs from sticking, which is one less thing to worry about.

If you don’t have an egg bite maker, a mini muffin pan is a reasonable substitute, though the exact time and temperature for that method hasn’t been tested here. Start checking earlier than you would with the maker and adjust from there.

  • Eggs – Large, you’ll need 2.
  • Heavy whipping cream – Just a splash, adds richness and creaminess.
  • Frozen spinach – Thawed, squeezed dry, and chopped. Leftover steamed spinach works too.
  • Cheese – Cheddar has the best flavor, though Swiss, gruyere, or Parmesan all work well.
  • Green onion – Optional, skip it if you’re not a fan.

Fill your egg bite maker’s water reservoir according to the manufacturer’s instructions, and preheat it.

Whip the eggs with the cream, salt, and pepper. Fill the egg cups about 3/4 full with the egg mixture. Add the cheese, onion, and spinach to the egg cups, then top with the remaining egg mixture. Do not overfill.

Close the lid and cook for about 7 minutes, or until the eggs are fully cooked through. Remove from the cups and serve.

Make It A Meal

Serve these with a Blueberry Muffin for a fuller breakfast spread, or add Corned Beef Hash or Sausage n Egg Cups if you want something more substantial. You can serve these egg bites with anything or just nibble on them by themselves! A slice or two of bacon would be yummy, too. Ingredients

  • 2 eggs
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons frozen spinach thawed, squeezed and chopped
  • 1/2 tablespoon green onion finely chopped
  • 2 tablespoons shredded cheese
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  2. I have a dash egg bite maker but mine always come out looking a little like a muffin. Wide and brown on top and shriveled and light in the bottom. How’d you get yours to look so perfect?

    • It sounds like you might be over-filling them – they get a muffin top if they’re too full. And, if you overcook them, they get all nasty. Try filling them and cooking them less. Oh, and make sure you’ve got a good balance of cream and cheese to egg! Good luck and let me know how it goes!
