Keto Egg Bites with Spinach and Cheese

Ingredients

  • 2 eggs
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons frozen spinach thawed, squeezed and chopped
  • 1/2 tablespoon green onion finely chopped
  • 2 tablespoons shredded cheese
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Fill the Dash Egg Bite Maker with water as per the instructions. Preheat it.
  • Whip the eggs with the cream, salt and pepper. Fill the egg cups 3/4 of the way full with the egg mixture. Add the cheese, onion, and spinach to the egg cups and top with the remaining egg mixture. Do not overfill the cups!
  • Close the lid on the Dash Egg Bites Maker and cook for about 7 minutes or until the eggs are fully cooked.
  • Remove from the cups, and enjoy!

Notes

Recipe Card Tips

  • Fill the cups about 3/4 full, not all the way. Overfilling causes a "muffin top" look instead of an even bite.
  • Watch the cook time closely. Overcooking turns the texture rubbery instead of soft and custardy.
  • Get the cream-to-cheese-to-egg ratio right. Too little of either throws off the texture even if the fill level and cook time are both correct.
