  1. In a large skillet, melt the butter.
  2. Add the diced onion, carrots, and celery and cook over medium heat until the onion is soft and translucent – about 5-6 minutes.
  3. Add the finely chopped cauliflower and mushrooms and continue cooking over medium heat until the mushrooms are soft and have given off their liquid.
  4. Add the chopped fresh herbs, then add the chicken broth. Mix well. Continue simmering over medium-low heat for 4-5 minutes or until most of the liquid has evaporated.
  5. Season with salt and pepper.
  6. Let this mixture cool before stuffing it into the bird, or serve it as keto dressing in a pretty bowl beside the turkey.

It just takes a few easy swaps to make this a keto vegan stuffing. Instead of butter use your favorite plant-based oil (olive oil works just fine), and swap the chicken broth for vegetable broth. Then, the dish will be a delicious vegan stuffing recipe!

  • Fresh herbs transform this dish into something special. Fresh parsley is available just about everywhere, but if you can’t get fresh rosemary or fresh sage, use 1 teaspoon of dried herbs instead of fresh.
  • Add a pinch of red pepper flakes to add a bit of heat, or 1/2 a teaspoon of chipotle powder for a smoky heat.
  • Add crumbled sausage to this dish to make it a meatier low carb stuffing.
  • Make this keto holiday stuffing recipe ahead of time then just pop it in the oven to warm it if you’re serving it as dressing, or stuff it into the turkey before roasting it.
