Mix the cheeses, sour cream, and seasonings together first. If using canned crab, drain it well and squeeze out the excess water, or the finished dip turns watery. Pick through the crab carefully for stray bits of shell. Soften the cream cheese ahead of time too, it blends in far more smoothly than cold.
White cheddar works best here, though pepper jack or Monterey jack are both good substitutes. Straight Parmesan on its own would likely be too strong a flavor to carry the whole dip.
One clarification worth noting: the calculated nutrition currently shows 1 gram of net carbs, but working through the ingredients by hand lands closer to 3 grams, the figure worth trusting until the calculator is corrected. Imitation crab hasn’t been tested here, some brands run surprisingly high in carbs, and it isn’t gluten-free.

Great question! There are 3 grams of carbs in one serving of this recipe, 0 grams of fiber and 0 sugar alcohols. So, there are in fact, 3 net grams of carbs (total carbs-fiber-sugar alochol=net carbs).
Can I use artificial crab?
I haven’t tested it but I don’t see why not! Just watch it isn’t too watery. Enjoy!
I would be very careful using artificial crab. The one I have on hand is very high in carbs.
Just make sure you’re not serving it to anyone that’s celiac! Imitation crab isn’t gluten free so it wouldn’t be safe for them to eat.
