Chef Jenn’s Tips
- Use a good pork tenderloin for this recipe – look for one that hasn’t been “seasoned.”
- Don’t use thick-cut bacon for this recipe. Thinner is better, and it’ll get a bit crispy around the edges.
- Change up the flavor by using peppered bacon instead of regular bacon.
- Don’t overcook the pork! Use a digital meat thermometer and pull the pork from the oven when it reaches 145-F to 150-F, and it’ll be moist and juicy. The FDA says to always cook pork tenderloin to at least 145-F and let it rest for 5 seconds.
- Let the meat rest for a few minutes after cooking so that the juices don’t run out when you cut it.
- Make twice the pork! Buy, cut and wrap 2 pork tenderloins. Cook 4 servings and freeze the rest before cooking for a quick and easy weeknight meal. Use a vacuum sealer, and your pork will stay freezer burn-safe for up to a year.
