Keto Sourdough Chaffles (Tangy, No Starter Required)

Missing the tang of real sourdough bread is real on keto, and these chaffles genuinely deliver it. Keto sourdough chaffles balance savory and tangy, and they have become my favorite chaffle base.

A chaffle is a cheese and egg waffle, cooked in a mini waffle maker until golden brown. This version skips the eggy flavor other chaffles can have, thanks to a bit of almond flour and sour cream.

Because of the sour cream, these are not the crispiest chaffles out there, but they hold up genuinely well to whatever you put on them. Set the waffle maker on top of a plate while it cooks, since batter tends to ooze out a bit.

Use egg whites only, not whole eggs. A reader once asked why, and the answer is the egg white acts as a binder without giving the chaffle an excessive eggy taste. Liquid egg whites work too, just use an equal amount and whisk them well first.

Measure the cheese by volume, not weight, another common point of confusion. A half cup means lightly packing shredded cheese into a measuring cup, not weighing it out in grams. Use full-fat sour cream for the best results, and mix up the cheese if you like, havarti, gouda, Monterey Jack, or any other mild, melty cheese all work well.

These are genuinely versatile. Use them for sandwiches, top with bacon and egg for breakfast, use as a taco shell, or just snack on them plain. One reader made hers with gouda for a toasted tomato sandwich and loved it.

Start by preheating your chaffle maker (mini waffle maker) as per the manufacturer’s instructions. I find it helps to use a bit of cooking spray or oil to help those golden-brown chaffles release more easily.

Add the egg whites to a bowl and whip with a fork until frothy. Add the remaining ingredients and mix well.

Add half the chaffle batter to the chaffle maker and close the lid, cooking it for about 4-5 minutes or until the chaffle is golden brown and releases easily. Repeat!

These freeze well. Wrap cooled chaffles in plastic wrap and a layer of foil, or use a freezer-safe zipper bag, for up to 3 months. Microwave for about 20 seconds to thaw, then re-toast in the waffle maker for the best texture.

Ingredients

  • 2 egg whites
  • 1/2 cup mozzarella
  • 2 tablespoons almond flour
  • 2 tablespoons sour cream

Instructions

  • Use a fork or whisk and whip the egg whites until frothy.
  • Add the remaining ingredients and mix well.
  • Spray both sides of the chaffle maker with cooking spray or oil. This is optional but will help keep them from sticking.
  • Pour half the batter into a pre-heated chaffle maker and close the lid (don’t lock it).
  • Cook for about 4-5 minutes or until the chaffle is golden brown and releases easily.
  • Repeat and enjoy!

  1. What do you mean by 1/2 cup of cheese? If I buy a 16 oz block of mozzarella and cut into 4ths, is that a 1/2 a cup.
    Is the 1/2 a cup packed or loose.

    • Great question! What I mean is, if you shredded some cheese and pack it lightly into a measuring cup, you’d need 1/2 cup of shredded cheese. So measure by volume, not weight. Hope that helps! ~Jenn
