A lot of keto muffins made with almond flour alone end up tasting eggy, since almond flour has no gluten or starch to hold the crumb together and the eggs end up doing all the work. Oat fiber is the fix here. It has zero net carbs on its own and adds the kind of texture almond flour can’t give you by itself, closer to what a wheat flour muffin actually feels like when you bite into it.
The other detail that matters is the lemon juice. It’s not there for flavor, it’s there to activate the baking soda, and skipping it is the most common reason a batch comes out flat and dense instead of properly risen. Fold the blueberries in gently at the very end, and use a large spoon rather than a mixer for this step so you don’t crush them and bleed color through the whole batter before it goes in the oven.

- Granulated sugar substitute – Use your favorite blend and brand. I used monkfruit in this keto blueberry muffin recipe.

- Heavy whipping cream – Or almond milk.
- Vanilla extract
- Lemon juice – Fresh squeezed. This activates the baking soda, don’t skip it.
- Almond flour – Superfine grind is what works best in this recipe.
- Oat fiber
- Baking soda – Standard, needs the lemon juice to activate.
- Salt
- Lemon zest – From the same lemon you’re juicing.
- Fresh blueberries – Fresh or frozen, equal measure either way.
How To Make Easy Keto Blueberry Muffins

Spray a muffin tin with nonstick cooking spray or line it with muffin cups. Preheat the oven to 350-F. With a hand-mixer, whip the butter and sugar substitute until it is light and fluffy. Add the eggs, beating well after each egg.

Add the heavy whipping cream, vanilla, and lemon juice and mix well with the hand-mixer.

In another bowl, combine the almond flour, oat fiber, baking soda, and lemon zest.

Add the dry ingredients to the wet ingredients and mix well with a large spoon. No need to use the beaters.

Fold in the blueberries, mixing carefully to not smush them.

Divide the batter evenly between the muffin cups making sure that each gets a fair share of blueberries. Bake at 350-F for about 15 minutes. Test if the muffins are done by inserting a toothpick. It should come out pretty clean. A few clingy crumbs are fine.
