Keto Air Fryer Asparagus with Garlic (20 Minutes)

This is the simplest of my asparagus recipes, just garlic, oil, salt, and pepper, and it genuinely does not need anything else. Keto air fryer asparagus with garlic is quick, crispy, and roasted to perfection.

Wash the asparagus thoroughly, the brush-like tips hide grit since asparagus grows partly underground. Nobody wants gritty asparagus.

Chef Jenn’s Take on Air Fryer Asparagus with Garlic

Dry the asparagus well after washing it, that helps the oil actually stick, which in turn helps the salt, pepper, and garlic stick too. It also helps the asparagus get toasty and roasty in the air fryer instead of steamy.

Toss the dried asparagus with the oil, minced garlic, salt, and pepper. Preheat the air fryer to 400 degrees, cook for 4 minutes, toss, then continue for another 2 to 3 minutes, until tender-crisp. Cook in a single layer for even cooking. Oven-style air fryers, the kind that open at the front with trays that slide in and out, work better here than basket-style models that tumble the food around, delicate asparagus does not hold up as well to that kind of tumbling.

Adjust the garlic to your own taste, do not be shy, asparagus and garlic are a genuinely natural match. A pinch of red pepper flakes adds heat if you want it.

Asparagus thickness varies a lot, so always check a piece before the timer goes off. You want a bit of crunch remaining, not fully soft.

Storage

This is not a good candidate for freezing, asparagus loses its lovely crunch and color once frozen and thawed. It keeps in the fridge for a few days, and is delicious cold. Reheat it in the air fryer if you want it warm again.
