You have to actually cook the ginger and garlic here, not just steep them in warm liquid, they need a real simmer to release their flavor.
Heat the coconut aminos and water until warm but not boiling, add the sweetener, and stir until fully dissolved. Add the ginger and garlic and simmer 3 to 4 minutes at a bare simmer. Turn off the heat and let it cool before whisking in the xanthan gum vigorously, then let it sit about 10 minutes to thicken. The finished sauce should be slightly thickened and glossy, not thick like gravy. Use fresh ginger specifically, never powdered, and fresh garlic too, both genuinely matter here.
Use a brown sugar substitute specifically, not white or powdered, the flavor is different. Cap the xanthan gum at a quarter teaspoon total, and skip it entirely if using this as a marinade rather than a dipping sauce, since a marinade does not need to be thickened. If marinating a protein or vegetables, give it at least 20 minutes in the fridge, longer if you have time, more time genuinely means more flavor.

Ingredients
- 1/2 cup coconut aminos or soy sauce

Instructions
- Add the coconut aminos (or soy sauce) to a small pot along with the water and So Nourished brown sugar substitute.
- Heat this over medium heat until the brown sugar has dissolved.
- Add the garlic and ginger and simmer for 3-4 minutes. Turn off the heat and let cool.
- Add the xanthum gum, using a whisk to vigorously whisk it in. Let it sit to thicken about 10 minutes before using. Enjoy!
