Whether you are making brunch for a crowd or just want a hearty meal to feed the family, this one never disappoints. Keto bacon and asparagus breakfast casserole is loaded with flavor and made effortlessly in a pressure cooker.

Chef Jenn’s Take on Bacon and Asparagus Breakfast Casserole

Do not drown the strata, the water level inside the pressure cooker should not be too high, or you will end up with a soggy, drenched casserole instead of a proper one.

Crisp the bacon first and remove it, leaving about a tablespoon of that fat in the pot, then cook the onion with a touch of sweetener until caramelized. Rinse and scrub the pot’s liner before adding fresh water for the actual cooking step. Grease a heatproof bowl, then layer the bread cubes, cheese, bacon, asparagus, and onion twice, pour the egg mixture over the top, and finish with the remaining cheese. Lower the dish into the pressure cooker using the wire basket, the water should come up to about halfway on the dish. Pressure cook on high for 20 minutes, natural release for 10 minutes, then manually vent the rest of the way.

Skip or reduce the onion for a lower carb count. Swap the asparagus for broccoli if you are not a fan. If Swiss cheese is too strong for your taste, cheddar, marble, or jack all work well in its place.

How to Make Bacon and Asparagus Breakfast Casserole

Set the Instant Pot to sauté on medium heat. Add the bacon, cook until crisp, then remove.

Meanwhile, whisk together the eggs, cream, salt, and pepper. Leave about 1 tablespoon of bacon fat in the Instant Pot, then add the chopped onion and sugar substitute. Cook until the onions are caramelized, then set aside.

Give the Instant Pot inner liner a quick rinse and scrub, then return to the electric pressure cooker. Add about 3 cups of water and set to Pressure Cook on high for 20 minutes.

Grease a 7-cup Pyrex bowl with butter. Layer half of the bread cubes, a third of the Swiss cheese, half the bacon, half the asparagus, and half the onion into the greased Pyrex dish . Repeat the layers.

Slowly pour the egg mixture over the ingredients, then top with the remaining Swiss cheese.

Using the included wire basket, carefully lower the strata into the Instant Pot. The water should come up to about the half-way point in the cooking dish.

Seal the lid and press start. When the cooking time is up, let the Instant Pot naturally release for 10 minutes, then open the vent to release any remaining pressure. Carefully remove once the pressure gauge drops and serve.

Make It A Meal

This is hearty enough to stand entirely on its own, sides are optional. If you’d like, add more bacon on the side, or Crispy Keto Chaffles as a low-carb bread option.

Storage

This freezes beautifully, a great option for meal prep. Chill the casserole in the fridge overnight, then wrap tightly in plastic wrap and a layer of foil, and freeze for up to 3 months.

Is breakfast casserole keto friendly?

Traditional breakfast casseroles wouldn’t be considered great for keto due to the high-carb bread used in most recipes. But this Instant Pot strata recipe uses low-carb ingredients to make it keto-friendly!

Absolutely! I love adding sour cream, fresh herbs, or even more cheese. I recommend using low-carb toppings to keep your casserole keto.

  • Don’t overfill the pressure cooker with water, too much turns the strata soggy instead of properly set.
  • Crisp the bacon and caramelize the onion in the pot first, before rinsing it out for the actual cooking step.
  • Layer the ingredients twice for even distribution throughout the casserole.
Because the carbs and nutritional values of keto friendly bread can vary so drastically, I haven’t included them here. Read the labels carefully of store-bought bread and add the values of 1 slice of bread to each serving. A good keto bread should add minimal net carbs to the final count.
