Use only the egg whites here, saving the yolks for another recipe. Whip them frothy first, then mix in the sour cream, and finally blend in the cheese and almond flour.
Cook half the batter at a time in a mini waffle maker, about 4 to 5 minutes, until golden brown and releasing easily from the plates. If you are using leftover turkey, season it lightly with salt and pepper before layering it onto the chaffle.
A quarter teaspoon of dried sage stirred into the batter adds more of that Thanksgiving flavor if you want it. No cranberry sauce on hand? Mayonnaise works as a substitute in a pinch.
Chaffles can genuinely be made ahead, cook them earlier and just recrisp in the waffle maker for a few minutes right before you assemble the sandwich. A slice or two of crisp bacon is a nice addition too, if you want to build on the base recipe.

- Keto Cranberry sauce
- Eggs – Whip these frothy first, saving the yolks for another recipe.
- Sour cream – Adds tang to the chaffle batter.
- Almond flour – I use this finely sifted almond flour which gives the chaffles a lovely texture
- Mozzarella cheese – Or another mild, good-melting cheese.
- Pink Salt and pepper – use pink salt to help keep your electrolytes in check!
How to Make Turkey Cranberry Chaffwich

Preheat the mini waffle maker. Whip the egg whites until frothy. Add the sour cream and mix well. Add the cheese and almond flour, and blend well.

Cook half the batter at a time, about 4 to 5 minutes, until golden brown and releasing easily. Repeat with the remaining batter.


Lay the turkey slices on top of one chaffle. Top with the cranberry sauce, then the other chaffle.

Make It A Meal
This uses my own Cranberry Sauce as a topping. I love a hearty bowl of Shrimp Chowder with Chipotle alongside this, or Beefy Minestrone Soup if you’re not a fan of seafood.

Storage
Chaffles freeze well on their own. Cook them, cool completely, then freeze in a freezer-safe bag for up to 3 months. Recrisp straight from frozen in the waffle maker or toaster before assembling the sandwich fresh.

- To make the chaffle: Preheat your Dash chaffle maker. Whip the egg whites until frothy, then add the almond flour, sour cream, and cheese. Mix well. Cook half the batter at a time until brown and crispy.
- Lay the turkey slices on top of one of the chaffles. Top with 2 tbsp of keto cranberry sauce. Top with the remaining chaffle.
