Most deviled eggs fall apart the second you try to pipe or shape the filling, because a straight mayo-and-yolk mixture is too loose to hold any kind of decoration on top. That works fine for a plain deviled egg, but not for a spider sitting on top of one.
Cream cheese and chicken solve that problem. Blending them into the yolks instead of using mayo gives you a filling with real body, thick enough to mound up and still hold a shape once the olive spider goes on top. It also means each egg carries more protein than a standard deviled egg does.
The eggs themselves matter just as much as the filling. Old eggs peel easier than fresh ones, so if you have a carton sitting in the fridge for a week or two, use those instead of eggs you just bought. Bring them to a boil, then kill the heat and let them sit covered for 10 to 11 minutes rather than boiling the whole time.

- Cooked chicken breast – Shredded or diced small before blending, for protein and body in the filling.

- Red onion – Optional, thinly sliced for an alternate “creepy” leg option instead of olive.
How to Make Keto Halloween Deviled Eggs with Spiders

Boil the eggs, then cool and peel them. Bring the water to a boil, add the eggs, boil 5 to 6 minutes uncovered, then turn off the heat, cover, and let sit for 10 to 11 minutes before draining and chilling in cold water.

Cut each cooled and peeled hard-boiled egg into two halves. Scoop out the yolks and transfer them to a medium-sized bowl. Add the softened Philadelphia cheese and chicken breast to the bowl with the yolks, then mix with an immersion blender or hand mixer.

Add the paprika plus salt and pepper to taste and mix well. Transfer the yolk mixture back into the egg white halves being gentle not to break them.

Cut a black olive in half across the middle. Place one half on the yolk mixture for the body of the spider, then cut the other half of the olive into 8 slices to form the legs. Cut each slice in half again if they’re too long.

Alternatively, cut some thin slices of red onion to make red spider legs for an extra-creepy look.
Make It A Meal

Storage
Store in an airtight container in the fridge for up to 3 days. These do not freeze well, since egg whites turn rubbery once thawed. If you want to prep ahead, make the yolk and chicken filling a few days early and freeze that separately, then boil fresh eggs and assemble closer to serving.
