For the Hot Chocolate
- 1 cup almond milk
- ¾ cup heavy whipping cream
- 1 tablespoon unsweetened cocoa powder
- ½ teaspoon stevia powder
For the Dalgona Coffee
- 2 tablespoons instant coffee
- 1 tablespoon Lakanto Gold sweetener
- 2 tablespoons boiling water
Heat the almond milk, heavy cream, cocoa powder, and stevia in a small saucepan over medium heat, whisking constantly. Bring to a gentle boil and cook for 3 minutes, then remove from the heat.
Add the instant coffee, Lakanto Gold, and boiling water to a mixing bowl. Whip with a hand mixer on high speed for 3 to 4 minutes until thick and fluffy.
Divide the hot chocolate between two mugs. Spoon the whipped coffee on top and serve immediately.
Chef Jenn’s Tips
- Use instant coffee or espresso only; regular ground coffee will not whip properly.
- Whip the dalgona until stiff peaks form, so it sits cleanly on top of the mocha.
- Warm the mugs with hot water before assembling to keep the drink hotter longer.
- Adjust the sweetness after mixing the mocha base if your cocoa powder is very bitter.
