Keto Salmon Patties

- 1 cup cooked salmon
- 2 tablespoons mayonnaise
- 1 tablespoon shallot finely chopped
- 1 tablespoon parsley finely chopped
- 1/2 tablespoon dill finely chopped
- 1/2 teaspoon garlic powder
- 2 tablespoons egg whip it with a fork first
- 5 tablespoons almond flour divided
- 1 tablespoon lemon juice
- 1 tablespoon capers drained
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons oil for fryring
Mix the salmon (gently) with the other ingredients, including the 2 tbsp of almond flour (reserve the other 3 tbsp for dredging).
Form the mixture into two patties and dredge it into the other 3 tbsp of almond flour. Be gentle - they're delicate!
Heat the oil in a skillet over medium heat. Fry the patties for 2-3 minutes per side and until golden brown.
Serve with lemon wedges or your favorite sauce and enjoy!

- Don't pulverize the salmon while mixing. Big flakes are the whole point of this recipe.
- Handle the patties gently, especially while flipping. They're delicate, closer to a crab cake than a regular burger.
- Only 2 tablespoons of almond flour goes into the mixture; the rest is for dredging the outside.
