Ingredients

  • 2 tablespoons butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrot
  • 4 cups cauliflower finely chopped
  • 8 ounces mushrooms finely chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh rosemary chopped, or 1 tsp dried
  • 2 tablespoons fresh sage chopped, or 1 tsp dried
  • 1/2 cup low sodium chicken broth
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon ground black pepper or to taste

Instructions

  • In a large skillet, melt the butter over medium heat.
  • Add the diced onion, carrots, and celery and cook over medium heat until the onion is soft and translucent - about 5-6 minutes.
  • Add the finely chopped cauliflower and mushrooms and continue cooking over medium heat until the mushrooms are soft and have given off their liquid.
  • Add the chopped fresh herbs, then add the chicken broth. Mix well. Continue simmering over medium-low heat for 4-5 minutes or until most of the liquid has evaporated.
  • Season with salt and pepper.
  • Let this mixture cool before stuffing it into the bird, or serve it as keto dressing in a pretty bowl beside the turkey.
