Keto Cauliflower Stuffing
Loaded with fresh herbs and plenty of flavor, this is a tasty keto stuffing recipe that's perfect inside the turkey or served on the side as dressing!

- 2 tablespoons butter
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced carrot
- 4 cups cauliflower finely chopped
- 8 ounces mushrooms finely chopped
- 2 tablespoons fresh parsley chopped
- 1 tablespoon fresh rosemary chopped, or 1 tsp dried
- 2 tablespoons fresh sage chopped, or 1 tsp dried
- 1/2 cup low sodium chicken broth
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon ground black pepper or to taste
In a large skillet, melt the butter over medium heat.
Add the diced onion, carrots, and celery and cook over medium heat until the onion is soft and translucent - about 5-6 minutes.
Add the finely chopped cauliflower and mushrooms and continue cooking over medium heat until the mushrooms are soft and have given off their liquid.
Add the chopped fresh herbs, then add the chicken broth. Mix well. Continue simmering over medium-low heat for 4-5 minutes or until most of the liquid has evaporated.
Season with salt and pepper.
Let this mixture cool before stuffing it into the bird, or serve it as keto dressing in a pretty bowl beside the turkey.
