- 1 1/2 cup almond flour
- 1/4 cup salted butter
- 2 tablespoons oat fiber
- 1 tablespoon vital wheat gluten
- 1 tablespoon SoNourished sweetener
- 1 egg white
- 1/4 teaspoon salt
Melt the butter and let cool slightly.
Combine the almond flour, vital wheat gluten (optional), oat fiber, sugar, and salt in a small bowl.
Mix the butter and egg white, then combine this mixture with the almond flour mixture.
Mix well and let stand two minutes.
Press the keto pie dough into a tart or pie pan. Prick it about six times with a fork to keep it from puffing up.
Bake in a pre-heated 325-F oven for 10 minutes or until lightly golden brown. Let cool and fill with your favorite fillings!
Recipe Card Tips
- Use superfine almond flour. Pulse regular almond flour in a food processor first if you're not sure it's fine enough.
- Press the dough in rather than rolling, using a flexible spatula or the back of a spoon.
- Prick the dough about six times with a fork before baking, to keep it from puffing up.
- This is enough pie dough to make one 10-inch keto pie crust.
