Keto Coffee Jelly

Ingredients

  • 2 cups water
  • 4 teaspoons instant coffee
  • 2 tablespoons erythritol powder
  • 1/8 teaspoon stevia powder
  • 2 tablespoons unflavored gelatin

Instructions

  • Combine all ingredients in a small saucepan. Let rest 1 to 2 minutes so the gelatin begins to hydrate.
  • Bring to a boil over medium heat, stirring constantly, until the coffee and gelatin are fully dissolved, about 5 minutes.
  • Pour evenly into 3 cups or ramekins. Cool on the counter for 10 minutes.
  • Refrigerate for at least 3 hours until fully set.
  • Serve topped with unsweetened whipped cream or a drizzle of heavy cream.

Notes

Recipe Card Tips

  • Use erythritol powder, not granular. Granular erythritol in a cold-set dessert can leave a sandy texture. If powder isn't on hand, pulse granular erythritol in a blender until fine before using.
  • Don't skip the rest period before heating. Letting the gelatin hydrate for a minute or two in the cold liquid before the burner comes on gives you a smoother, more even set.
  • For the cubed presentation, pour the hot liquid into a lightly oiled shallow dish, chill, then cut into small cubes with a wet knife. A wet blade slides cleaner through set gelatin than a dry one.
