- 2 pounds ground chicken
- 1 cup cooked spinach squeezed dry and chopped
- 1 cup feta cheese crumbled
- 1/4 cup Greek yogurt PLAIN flavor
- 1/ cup red bell pepper diced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/4 cup shallot diced
- 1 tablespoon lemon zest
- 1/4 teaspoon salt

- 1 egg
Chop and squeeze excess water from the spinach.
Combine all the ingredients and mix well.
Form meatballs from the mixture with your hands, and line them up on a baking sheet with raised sides.
Cook at 375-F for about 30-40 minutes depending on the size of the meatball, or until the internal temperature reaches 165-F. Serve with colorful veggies and tzatziki - enjoy!
