Combine the So Nourished brown sugar substitute, yellow mustard, Dijon mustard, cider vinegar, dried thyme and garlic powder in a small bowl. Mix until smooth.
Cover the pork loin liberally with the glaze.
Roast the pork in a pre-heated 350-F oven for about 25 minutes per pound or until the pork is 145 to 150-F internally.
