Bacon-Wrapped Pork Tenderloin
Start with fresh pork tenderloin.

Trim the silver skin off the pork tenderloin.

Cut the pork into 4-5 equal portions.

Press them down gently to form round medallions.

Wrap each medallion in 2-3 slices of bacon.
Season well with salt and pepper.
Bake on a sheet pan until they reach 145-F. Let rest.
