  • 1 each English cucumber diced
  • 1 pint cherry tomatoes halved
  • 1 each shallot finely chopped
  • 1 tbsp avocado oil
  • 2 tsp red wine vinegar
  • 1 tbsp Italian seasoning
  • salt and pepper to taste


  • Wash and dice the cucumber.
  • Wash and slice the cherry tomatoes, or dice the tomato if using larger tomatoes.
  • Thinly slice or dice the shallot.
  • Make the vinaigrette by whisking the red wine vinegar into the oil. Add the Italian seasoning.
  • Toss it all together and serve!
