- 2 cups cucumber diced, from about 1 English cucumber
- 1 avocado diced
- 2 cups grape tomatoes halved
- 1/4 cup green onions sliced
- 2 tbsp lime juice
- 2 tbsp avocado oil
- 1/4 cup cilantro stems removed and chopped finely
- 1/2 tsp salt
Toss the diced vegetables with the chopped parsley, lime juice, and cilantro.
Add the avocado just before serving.
Season with salt and enjoy!
