  • 2 cups cucumber diced, from about 1 English cucumber
  • 1 avocado diced
  • 2 cups grape tomatoes halved
  • 1/4 cup green onions sliced
  • 2 tbsp lime juice
  • 2 tbsp avocado oil
  • 1/4 cup cilantro stems removed and chopped finely
  • 1/2 tsp salt


  • Toss the diced vegetables with the chopped parsley, lime juice, and cilantro.
  • Add the avocado just before serving.
  • Season with salt and enjoy!
