- 1 each English cucumber diced
- 1 pint cherry tomatoes halved
- 1 each shallot finely chopped
- 1 tbsp avocado oil
- 2 tsp red wine vinegar
- 1 tbsp Italian seasoning
- salt and pepper to taste
Wash and dice the cucumber.
Wash and slice the cherry tomatoes, or dice the tomato if using larger tomatoes.
Thinly slice or dice the shallot.
Make the vinaigrette by whisking the red wine vinegar into the oil. Add the Italian seasoning.
Toss it all together and serve!
