Hungarian Keto Goulash

Tender chunks of melt-in-your-mouth beef are enveloped in a savory sauce that's packed full of flavor in this keto version of Hungarian Goulash.

Ingredients

  • 2.5 pounds beef stew meat cubed
  • 3 tbsp avocado oil divided
  • 1 cup onions sliced
  • 3 cloves garlic roughly chopped
  • 2 cups low sodium beef broth
  • 2 tbsp tomato paste
  • 3 tbsp paprika
  • 1 tsp smoked hot paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp cider vinegar
  • 1 tsp salt divided
  • 1/2 tsp pepper

Instructions

  • Heat 1 tbsp of the oil in a skillet over medium high heat. Sprinkle the beef cubes with salt and pepper. Working in batches, and adding oil as needed, sear the beef in the oil until brown on all sides. Put the beef into the crock pot.
  • Heat 1 tbsp of the oil in the skillet and sautee the onions and garlic over medium heat until they're soft and translucent. Add the spices and cook an additional minute. Put the onion and spice mixture into the crock pot.
  • Deglaze the skillet with the cider vinegar and some of the beef broth if necessary. Put this, and all the pan scrapings, into the crock pot.
  • Add the tomato paste, 1/2 tsp of salt, and remaining beef broth to the crock pot.
  • Cook covered, on high, for 4-6 hours or until the beef is tender. Enjoy!
